Welcome to The Market Chefs!

Food.

It’s the one thing that binds all of humanity together, regardless of country or creed. The need for each of us to sustain our bodies with nutrition, and how our ancestors fulfilled that duty, has gone so far as to define cultures, history, and our way of life. Here in Idaho is no different, in my not so humble opinion. Here in Idaho, the beauty of nature sits, quite literally in some cases, right on our doorstep. Being minutes away from the tall and the uncut provides for a unique setting for foodies like ourselves, where we can both appreciate what food culture we have, while we explore the same beautiful, natural ingredients our predecessors used to forge their way through the wilderness of our state.

Our names are Dylan and Tony, and our love of food started young. For Dylan, the spark ignited in a Boise restaurant where shrimp scampi sat on a plate in front of him. He thought to himself “We have all these ingredients at home, I want to try to make this!” For Tony, his roots trace back to a deeply Italian and Polish household in Northwestern Pennsylvania. Upon moving to Idaho when he was very young, the culinary mindset of his European roots mixed with the natural ingredients of Idaho. The two of us combined becomes a tidal wave of culinary knowledge that grows bigger by the day, with each new ingredient an adventure.

And so that brings us to where we are now: Two foodies very much in love with the ingredients that have shaped our world. If our collection of books has anything to say about that (our bookcase in the kitchen is bursting at the seams!), then its high time we shared some of the adventures we are on with you! Every day is a learning experience, and the goal of this blog is simple: To share in the culinary journeys we both go on and to help bring together the people that helped find who we are. Farmers markets are our usual stomping grounds for the freshest produce, and so to honor that heritage, we decided to call ourselves ”The Market Chefs”. We may not have any classical training, or a restaurant to our names (though who knows for the future!), but we do share a love: That of trying new things, embracing the culinary wonders around us and growing from those discoveries. We can’t wait to show you what we’ve been learning on this culinary Journey of ours, and we hope you stick along for the ride!
